Ingredients

  • 1 1/4 lbs Sweet Potatoes (about 2 medium-sized), peeled and cut into 1-inch pieces
  • 1 1/2 cups Dried Lentils, rinsed
  • 3 medium Carrots, cut into 1-inch pieces
  • 1 medium Onion, chopped
  • 4 Garlic Cloves, minced
  • 1/2 tsp Ground Cumin
  • 1/4 tsp Ground Ginger
  • 1/4 tsp Cayenne Pepper
  • 1 carton (32 oz) Vegetable Broth
  • 1/4 cup Fresh Cilanto, minced

Directions

  1. In a 3-qt. slow cooker, combine the first nine ingredients. Cook, covered, on low for 5-6 hours or until the vegetables and lentils are tender. Stir in cilantro.
