Ingredients
- 1 1/4 lbs Sweet Potatoes (about 2 medium-sized), peeled and cut into 1-inch pieces
- 1 1/2 cups Dried Lentils, rinsed
- 3 medium Carrots, cut into 1-inch pieces
- 1 medium Onion, chopped
- 4 Garlic Cloves, minced
- 1/2 tsp Ground Cumin
- 1/4 tsp Ground Ginger
- 1/4 tsp Cayenne Pepper
- 1 carton (32 oz) Vegetable Broth
- 1/4 cup Fresh Cilanto, minced
Directions
- In a 3-qt. slow cooker, combine the first nine ingredients. Cook, covered, on low for 5-6 hours or until the vegetables and lentils are tender. Stir in cilantro.
