#FoodieFriday: Red Lentil Latkes
If you're craving a delicious twist on a traditional dish, these Red Lentil Latkes are the perfect recipe to try! While traditional latkes are made with potatoes, this version adds the hearty goodness of red lentils and a hint of cheese and hot sauce for extra flavor. Whether you enjoy them for a weeknight meal or serve them at a special gathering, these latkes are sure to be a hit.
Packed with protein from lentils and a savory crunch from potatoes, this dish is both nutritious and satisfying. Serve with a simple side salad for a complete meal that’s as healthy as it is delicious!
Ingredients:
- 1/2 cup dry red lentils
- 1 medium potato (grated, about 1/2 pound; peeling is optional)
- 1 large egg
- 1 garlic clove (finely sliced)
- 2 tablespoons Parmesan cheese (or other cheese, optional)
- 1-2 dashes hot sauce (optional)
- 1/4 teaspoon salt
- Black pepper (to taste, optional)
- 2 tablespoons canola or olive oil (for cooking)
Directions:
- Wash hands with soap and water.
- Add the lentils to a medium saucepan and cover with water by about an inch. Bring to a boil, then lower heat to simmer and cook until tender, about 15 minutes. Drain and set aside.
- Meanwhile, remove excess water from the grated potato by squeezing it by hand or wringing it out in a clean tea towel.
- Crack the egg into a medium bowl and beat lightly. Add the grated potato, cooked lentils, garlic, green onion, and cheese (if using) to the bowl. Season with salt and pepper and mix well.
- Heat a large skillet over medium heat, then add 1-2 tablespoons of oil. Working in batches, form clumps of the potato-lentil mixture (about the size of a golf ball) and flatten them into patties about ½ inch thick.
- Cook for 4-5 minutes per side, until the latkes are golden brown and crispy. Add more oil as needed for each batch.
- Serve immediately or keep warm in a 200°F oven for up to an hour.
These Red Lentil Latkes are a flavorful, healthy spin on a classic dish. With the added benefits of lentils and a touch of spice, they're perfect for a light meal that doesn’t compromise on flavor. For more great recipes, check out USDA’s MyPlate Kitchen.
