Ingredients:

  • 1/2 cup dry red lentils
  • 1 medium potato (grated, about 1/2 pound; peeling is optional)
  • 1 large egg
  • 1 garlic clove (finely sliced)
  • 2 tablespoons Parmesan cheese (or other cheese, optional)
  • 1-2 dashes hot sauce (optional)
  • 1/4 teaspoon salt
  • Black pepper (to taste, optional)
  • 2 tablespoons canola or olive oil (for cooking)

Directions:

  1. Wash hands with soap and water.
  2. Add the lentils to a medium saucepan and cover with water by about an inch. Bring to a boil, then lower heat to simmer and cook until tender, about 15 minutes. Drain and set aside.
  3. Meanwhile, remove excess water from the grated potato by squeezing it by hand or wringing it out in a clean tea towel.
  4. Crack the egg into a medium bowl and beat lightly. Add the grated potato, cooked lentils, garlic, green onion, and cheese (if using) to the bowl. Season with salt and pepper and mix well.
  5. Heat a large skillet over medium heat, then add 1-2 tablespoons of oil. Working in batches, form clumps of the potato-lentil mixture (about the size of a golf ball) and flatten them into patties about ½ inch thick.
  6. Cook for 4-5 minutes per side, until the latkes are golden brown and crispy. Add more oil as needed for each batch.
  7. Serve immediately or keep warm in a 200°F oven for up to an hour.
