Lemon Poppy Seed Muffins

This "Foodie Friday" we're sharing a yummy recipe from Dr. Yum Project

Ingredients

  • 1/3 cup lemon juice
  • 6 tablespoons honey
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 4 eggs
  • 2 cups blanched almond flour
  • 1/3 cup arrowroot powder (or tapioca flour)
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons poppy seeds
  • 3 tablespoons lemon zest (about 3 lemons)

Instructions

  1. Preheast oven to 350 degrees
  2. Coat muffin tins with a fine mist of oil or line them with paper cups
  3. Combine lemon juice, honey, melted coconut oil, vanilla extract, almond extract, and eggs in a large bowl and whisk together
  4. To a separate bowl, add flour, baking soda, salt, poppy seeds, and lemon zest and stir to combine
  5. Add dry ingredients to wet ingredients and stir until incorporated
  6. Fill muffin cups 3/4 full and bake 16-20 , minutes or until a toothpick comes out clean

Prep Time: 15 Minutes
Cook Time: 20 Minutes
Yields/Serves: 12 Muffins
